Sprint is the ideal tool for cutting all types of cheese. Sprint is the new cutting tool created to meet the needs of dairies and cheese mongers to be able to cut every kind of cheese, from soft to hard ones, virtually effortlessly. With Sprint-Evo you can cut any cheese just by pressing with both hands on the upper side of the cutting tool.

The blade will do the rest. Thanks to its special design, Sprint allows to cut the smaller cheeses, like Pecorino cheese, directly, without portioning the whole wheel beforehand. For bigger cheese wheels or blocks, it is necessary to work with smaller blocks or wedges pre-cut from the original wheel. After each cutting operation, Sprint will stop in a locked position, and only the operator will be able control the return of the blade to the open position.
 

The return of the blade to the open position – work position – is nonetheless fully automated, and doesn’t require the manual intervention of the operator. Sprint is made of hypoallergenic material for food applications, it is dishwasher-safe and will retain its original characteristics even after many washing cycles.

Sprint can cut cheese wheels from 330 mm to 160 mm diameter, thanks to the specific plates. Using a 160mm diameter plate it is also possible to cut cheese wheels with a smaller diameter. Using the specific rectangular base, it is also possible to cut cheese in rectangular or cylindrical shapes.
 

Sprint is made of materials suitable for food applications. They can be divided into:

• Metals
• Stainless steel AISI 304 for the fixed structure, the movable part, spring hinges, rotating plate and all the mounting elements. All these parts undergo a brightening surface polishing treatment that enhances hygiene and surface cleaning.
• Stainless steel for the blade, by the well-known brand Sanelli
• Technopolymers
• Blue POM-C (acetal resin, polyoxymethylene) for the turning base, for the supporting elements of the movable part and the spacer under the turning plate
• Rubber for the supporting elements of the fixed structure and for the shock absorbing elements of the upper part

HOW TO USE SPRINT

Position Sprint on a horizontal surface, at approximately 2/3 of the user’s height. Make sure that the tool is well positioned and stable during the normal cutting operations. Choose the most suitable base for the dimensions of the cheese wheel that needs to be cut. In case of rectangular or cylindrical shapes, use the rectangular base to cut the cheese. Secure the cheese block or wheel with the brackets on the sides of Sprint, and use the knobs to lock them in place. Press with both hands on the upper side of the cutting tool, making sure that no other tool or person is in close proximity of the blade.
 

CLEANING INSTRUCTIONS

To clean Sprint, use the frontal knob to unlock the upper movable part and remove the base pulling it upwards. Separate the rubber ring from the plastic ring with metal flaps; if needed the plastic ring can be washed in the dishwasher. N.B.: the maximum temperature is 90°C, above this point the rubber will reach the softening point. To clean the blade, unscrew the 4 screws on the top part and remove it.
